What is Choros a la Chalaca

Choros a la chalaca means steamed mussels Callao-style. It consists of juicy mussels topped with traditional Peruvian salsa called ‘salsa criolla’.

This recipe originates in the port city of Callao which is near Lima, located in Peru. This appetizer is typically enjoyed with a nice cold beer but will also easily impress as party food.

Ingredients for Choros a la chalaca

Simple ingredients needed to make traditional choros a la chalaca:

Mussels

Pisco (white wine or vodka)

Water

Yellow onion

Garlic

Red onion

Tomato

Rocoto pepper (or any chili pepper)

Cilantro

Limes

Salt and pepper

Choclo kernels – these have a different taste than North American corn. It’s not as sweet so if you can’t find these you may use regular corn but just note it will be a sweet taste rather than the traditional starchy corn from Peru. Search your local Latin American supermarkets to find it.

How to make Peruvian Steamed Mussels

  • Clean your mussels and make sure none of them are open. If they are throw them out because they are no good.
  • In a large saucepan add the water, pisco, onion, and garlic. Bring this to a simmer and add the mussels. Cook for 5 minutes. When they start to open remove them from the heat
  • Once all the mussels are removed, let the cooking liquid reduce and save 2 tablespoons.
  • In a medium bowl add the tomato, red onion, rocoto pepper, cilantro, lime juice, choclo, and 2 tablespoons of the cooking liquid. Mix until combined evenly. Taste and add salt and pepper if needed.
  • Break off half of the mussel shell and add a spoonful of the salsa on top of the meat.
  • Arrange on a nice platter and serve cold. Enjoy!

  • 2 pound Mussels cleaned
  • ½ cup Pisco white wine or vodka will also work
  • 1 cup Water
  • 1 small Yellow onion
  • 4 Garlic cloves
  • 1 Red onion finely dinced
  • 1 Tomato finely diced
  • 1 tablespoon Rocoto pepper or red chili pepper
  • 3 tablespoons Cilantro finely chopped
  • limes juiced
  • salt and pepper to taste
  • 1 cup choclo kernels or regular corn if you don't mind sweetness instead of traditional starchy corn
