Pumpkin Bars with Cream Cheese Frosting

Pumpkin bars are the perfect treat around the fall season. I made them this year for Thanksgiving and even my godmother who is not a fan of pumpkin loved these!

If this is your first time baking or you’re not really a baker but want to make this, do it! This recipe is super easy you won’t be able to mess it up.

How to make pumpkin bars

  1. The first step is to make the pumpkin batter. In a large bowl whisk together the pumpkin puree, sugar, eggs, oil, and vanilla extract.
  2. In a separate bowl, whisk together the flour, cinnamon, salt, baking soda, and baking powder.
  3. Combine the dry ingredients to the wet ingredients and mix well until smooth. Do not over mix.
  4. Pour the batter into a pan and spread it out evenly.
  5. Bake for 30 minutes or until done. You can poke a toothpick in the middle to see if it comes out clean and you’ll know it’s done.
  6. Let the pumpkin bars cool down

How to make cream cheese frosting

  1. In a bowl add the cream cheese, heavy cream, butter, and vanilla extract until combined with a hand mixer.
  2. Add powdered sugar cup by cup until you reach your desired consistency and taste.
  3. Spread cream cheese frosting on top of the pumpkin bars.
  4. Cut, serve, and enjoy!

If you have any leftovers they should last up to 5 days covered in the fridge.

You could also skip the frosting and just dust them with powdered sugar if you wish or even eat them plain.

  • 1 can pumpkin puree
  • 3 eggs

  • ¾ cup canola oil
  • 1 teaspoon vanilla extract
  • cup all-purpose flour

Cream Cheese Frosting

  • 8 ounce cream cheese softened
  • 4 tablespoons butter softened
  • 2 ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons heavy cream

Instructions

  • Heat oven to 350°F
  • In a large bowl mix together the pumpkin, sugar, eggs, oil, and vanilla extract
  • In a separate bowl, whisk together the flour, cinnamon, salt, baking soda, and baking powder
