How to make strawberry shortcake cake

Making this strawberry shortcake cake recipe consists of three steps but it’s super easy and the end results are so worth it!

  • Vanilla cake – This vanilla cake is made with almond milk and I added about 2 tablespoons of buttermilk, if you want to use strictly plant-based milk it will work and your cake will still be moist. I got two layers of cake but I think you can definitely get three out of the batter.
  • Strawberry filling – This step takes less than 5 minutes. Slice up your fresh strawberries and toss them with some sugar and let them sit for an hour so the sugar can draw out the juices.
  • Whipped cream – Who doesn’t love freshly whipped cream? Made with heavy cream, powdered sugar, vanilla extract, and honey. I love a touch of honey but you can always skip it.

Vanilla Cake

  • 2 cup flour
  • ½ tsp salt
  • 1 tablespoon baking powder
  • ½ cup avocado oil any baking oil
  • ½ cup butter room temp
  • 1 cup sugar
  • 4 eggs
  • 1 tablespoon vanilla extract
  • ½ tsp almond extract
  • 1 cup almond milk
  • 2 tablespoons heavy cream

Strawberry filling

  • 1 ½ pound strawberries sliced
  • 2 tablespoons sugar

Whipped Cream

  • 2 cups heavy cream
  • ¼ cup powder sugar
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract


Strawberry filling

  • Slice strawberries and place them in a medium bowl with sugar. Cover and let this sit in the fridge. Save some to decorate the cake.

Vanilla Cake

  • Preheat oven to 350°F
  • Grease and line your cake pans with parchment paper and set aside
  • In a medium bowl whisk together the flour, salt, and baking powder and set aside
  • In a large bowl (with a hand or stand mixer) mix your vanilla extract, almond extract, oil, sugar, and butter until fluffy. Around 2-3 minutes
  • Pour in 1 egg at a time. Mix well then add the next egg
  • Add in half the dry ingredients and mix until combined then slowly add your milk, mix until combined, then add the rest of the flour while mixing
  • Pour batter into your cake pans and bake for 18-20 minutes or until they are light golden brown. Stick a toothpick in to test if they are done.
  • Let the cakes cool and make the whipped cream

Whipped cream

  • In a large bowl with a hand or stand mixer, add in your heavy cream, powdered sugar, vanilla extract, and honey if you choose. Whip on high speed until you the liquid becomes stiff peaks.

Assemble the cake

  • Place your first cake down and add a layer of whipped cream, then a layer of the strawberry filling. Along the edges of the cake add sliced strawberries.
  • Add your next layer, whipped cream, strawberry filling in the middle, and sliced strawberries along the edges of the cake on top of the whipped cream.
  • Serve immediately and enjoy!
