Sweet Potato Gnocchi Ingredients

Making vegan sweet potato takes only 3 simple ingredients or 4 if you’re feeling fancy.

  • Sweet Potatoes – Bake for 30 – 40 minutes or microwave if you’re in a rush. Check down below for full instructions.
  • Flour – if you have any dietary concerns like being paleo or gluten-free, use your favorite gluten-free or paleo flour. If you have no concerns all-purpose flour will work just as well.
  • Salt – add some flavor to the gnocchi
  • Oil – Feel free to add a dash of oil to help bind everything together – but not necessary.

How to make vegan sweet potato gnocchi

The first step to making vegan sweet potato gnocchi without eggs is to bake your sweet potatoes (or microwave) until fork tender. We need to get the sweet potatoes nice and soft so that they’re easy to mash. You can mash them with a fork or a potato ricer.

Next, combine the flour and salt and fold in the mashed sweet potatoes. Begin to knead the dough together until you form a nice ball. It shouldn’t be sticky but if it is add more flour.

Once you have a nice smooth ball cut it into quarters then eighths. Take one of the eighths and roll it into a log form. Now slice into 1/2 inches.

Take the back of your fork and roll the gnocchi to make rides or use a gnocchi board. If you’re feeling lazy you don’t even have to make any ridges at all!

Toss them into flour once more and now its time to boil.

Place a small batch into salted boiling water and cook for 2 minutes. When they float to the top that’s a sign that they’re done.

All that’s left is to cook them in your favorite sauce, add some garlic and fresh herbs, and your all set.

How to store vegan gnocchi

After you made the ridges you can easily store them in the fridge for a few days or in the freezer for up to 2 months.

  • 2 sweet potatoes
  • 2 cups flour plus more as needed
  • 2 tsp salt


  • Preheat oven to 400°F and bake for 30-40 minutes until fork tender.
    or poke some holes into the sweet potatoes with a fork, wrap them with a damp paper towel, and microwave for 5-10 minutes until tender.
  • Let them cool down
  • Remove the potato skins and place in a large bowl to mash or press through a potato ricer
  • Mix the salt into the flour and combine with the mashed potatoes and a dash of oil if you like.
  • Knead until mixture combined and nothing is sticking to the bowl/hands. Add more flour if still sticky.
  • Flour your surface and roll the dough into a ball. Cut into quarters and then roll into long ropes about 1 inch thick.
  • Next cut them into ½ inch pieces. Use the backside of a fork and your thumb and slide the gnocchi over it to make the ridges or use a gnocchi board. Lightly flour again.
  • Bring a large pot of water to a boil and add a few gnocchi at a time. When they float to the top that means they are done. Takes about 2 mintues. Place on paper towel.
  • Add your favorite sauce and enjoy.
