Turkey stuffed peppers without rice are low carb and keto-friendly meal that the whole family will love. A tasty balance of meat, veggies, and cheese that many cannot resist.

Turkey Stuffed Peppers
Stuffed peppers are usually filled with ground beef, rice, tomatoes and cheese but for this low carb recipe we will be leaving out the rice and substituting the ground beef for ground turkey. These are so good and full of flavor you wont even miss the rice.
Keto stuffed peppers ingredients
Ground turkey – feel free to use ground beef if you prefer or any other meat you have on hand – pork, chicken, Italian sausage, etc.
Bell peppers – green, yellow, orange, or red will do. Pick any colors you like.
Tomatoes – crushed tomatoes. I used roasted crushed can tomatoes for this recipe.
Cheese – Cheddar cheese, mozzarella, pepper jack, or a blend of your fav cheese will work for this recipe.

How to make turkey stuffed peppers
Start by washing off your bell peppers and cut them in half then clean out the seeds and membranes. Place on your baking sheet.
Heat some avocado oil in a large pan over medium heat. Sauté onion and garlic until onion is translucent, about 3 minutes. Next, add in the ground turkey and your seasonings. Cook until browned.
Next pour in the tomatoes and mix until evenly incorporated.
Stuff the peppers with the ground turkey mixture and pour a bit of water in the baking sheet. This will help soften the bell peppers while in the oven. Cover with a sheet of foil.
Bake until the peppers are soft for about 30 minutes. Remove the foil and add the cheese on top and let it bake for 5 more minutes until melted. Remove from the oven and enjoy!
