Mexican Street Corn (Elotes)

  • 4 corn on the cobs shucked
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or mexican crema
  • 1 garlic clove minced
  • 1/2 tsp chili powder
  • pinch of cayenne pepper
  • ¼ cup fresh cilantro chopped
  • ½ cup cotija cheese
  • limes some wedges for serving


  • Grill corn for 8-10 minutes or until lightly charred on all sides
  • In a bowl mix together the sour cream, mayonnaise, cilantro, garlic, cayenne pepper, and chili powder
  • Remove the corn from the grill and squeeze lime juice on top and then spread the mixture on all sides of the corn
  • Top with crumbled cotjia, more fresh cilantro and lime wedges. Enjoy!
