Pumpkin Bars

  • 1 can pumpkin puree
  • 3 eggs
  • cup sugar
  • ¾ cup canola oil
  • 1 teaspoon vanilla extract
  • cup all-purpose flour
  • teaspoon baking powder
  • ¾ teaspoon baking soda
  • teaspoon cinnamon
  • ¾ teaspoon salt

Cream Cheese Frosting

  • 8 ounce cream cheese softened
  • 4 tablespoons butter softened
  • 2 ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons heavy cream


  • Heat oven to 350°F
  • In a large bowl mix together the pumpkin, sugar, eggs, oil, and vanilla extract
  • In a separate bowl, whisk together the flour, cinnamon, salt, baking soda, and baking powder
  • Combine the dry ingredients to the wet ingredients and mix well until smooth. Do not over mix
  • Pour the batter into a pan and spread out evenly
  • Bake for 30 minutes or until done. You can poke a toothpick in the middle to see if it comes out clean and you'll know it's done. Let the pumpkin bars cool.

Cream Cheese Frosting

  • In a bowl add the cream cheese, heavy cream, butter, and vanilla until combined with a hand mixer
  • Add powdered sugar cup by cup until you reach your desired consistency and taste
  • Spread cream cheese frosting on top of pumpkin bars, cut and serve
