white wine or vodka will also work
or red chili pepper

or regular corn if you don't mind sweetness instead of traditional starchy corn
Clean your mussels and make sure none of them are open. If they are throw them out because they are no good.
In a large saucepan add the water, pisco, onion, and garlic. Bring this to a simmer and add the mussels. Cook for 5 minutes. When they start to open remove them from the heat
Once all the mussels are removed, let the cooking liquid reduce and save 2 tablespoons.
In a medium bowl add the tomato, red onion, rocoto pepper, cilantro, lime juice, choclo, and 2 tablespoons of the cooking liquid. Mix until combined evenly. Taste and add salt and pepper if needed.
Break off half of the mussel shell and add a spoonful of the salsa on top of the meat.
Arrange on a nice platter and serve cold. Enjoy!
