Preheat oven to 400°F and bake for 30-40 minutes until fork tender. or poke some holes into the sweet potatoes with a fork, wrap them with a damp paper towel, and microwave for 5-10 minutes until tender.
Let them cool down
Remove the potato skins and place in a large bowl to mash or press through a potato ricer
Mix the salt into the flour and combine with the mashed potatoes and a dash of oil if you like.
Knead until mixture combined and nothing is sticking to the bowl/hands. Add more flour if still sticky.
Flour your surface and roll the dough into a ball. Cut into quarters and then roll into long ropes about 1 inch thick.
Next cut them into ½ inch pieces. Use the backside of a fork and your thumb and slide the gnocchi over it to make the ridges or use a gnocchi board. Lightly flour again.
Bring a large pot of water to a boil and add a few gnocchi at a time. When they float to the top that means they are done. Takes about 2 mintues. Place on paper towel.
