Mashed Sweet Potatoes - Easy Recipe

Preheat your oven to 400°F. Clean the sweet potatoes and prick some holes in them with a fork.
Place the sweet potatoes on a baking sheet lined with parchemnt paper and bake for 40 minutes or until tender. Let the potatoes cool down a bit so it's easy to peel the skins off.
Scoop out the sweet potatoes and place in a large mixing bowl. Mash them with a hand masher or electric beater.
Pour the milk and butter in with the sweet potatoes and mix until creamy. Season with salt and pepper to your taste.
Serve in a nice bowl with fresh parsley on top and extra slices of butter.
