Peel and dice your sweet potatoes and add them to a large pot of water and bring to a boil. Reduce to a simmer for 10-15 minutes until fork tender.
Drain the sweet potatoes and preheat your oven to 350°F. Coat your baking dish with non-stick spray and let the potatoes cool slightly.
Next, take a large bowl. Add in the sweet potatoes, brown sugar, granulated sugar, half and half, melted butter, eggs, salt, vanilla, cinnamon, nutmeg, and cloves. Blend with a hand mixer until creamy and smooth.
Transfer mixture to your baking dish and add the pecan streusel.
Pecan Streusel Topping
In a large bowl combine the brown sugar, flour, and chopped pecans. *You can also use a food processor for these steps.*
Next pour in the melted butter until mixed well. Don't over mix.
Sprinkle the mixture on top of the sweet potatoes and bake for 30 - 40 minutes or until golden brown.
Near the end of baking the casserole add a layer of mini marshmallows and let it bake for 5 minutes.
